How JMS Tea creates its signature black tea.


The Process of Making Black Tea:


STEP 1: Picking

When picking black tea in summer, we use the One Bud Two Leaves method, manually selecting and picking the perfect black tea leaves.


STEP 2: Withering

Withering is the first step in the black tea manufacturing process. Through withering, the tea cyanines evenly lose the proper amount of water, reducing cell tension and becoming softer, which is crucial to the tea-making process.


STEP 3: Rolling

The leaves are curled into long strips. By destroying the leaf tissue, the tea juices are extracted and attached to the surface of the leaf. This way, the leaves will dissolve easily during brewing, infusing your tea with their rich taste.


STEP 4: Fermentation

Fermenting the tea leaves darkens the color, reinvigorates the flavor, and cultivates their aroma to the highest level. Varying degrees of fermentation produce different colors and aromas.


STEP 5:

In this final step, the tea leaves are dried until their water content decreases to below 5%. This destroys the remaining enzymes, halting fermentation and other biochemical reactions, and extends the tea’s shelf life.
